International Women's Day & Rice Pudding!

Today is International Women's Day! It's a great day not only because of that, but it's also beautiful outside and my son gets out early from school today to begin spring break. He has the next two days off from school so we are going to work our cows and get them into their calving pasture. We had our first baby calf born yesterday. It's that time of year. I love spring! Do you?

So, International Women's Day....what is it that exactly? Well, it is celebrated on March 8 every year. It commemorates the movement for women's rights. I believe it's a very special day indeed! When you think of a day commemorating women.....strong women, tough women....who do you think of? My Mom and Gram are the first females to come to my mind. I admire them both immensely for many reasons. My Gram passed away almost five years ago. I miss her so much, but I have so many great memories of her that she is always close by in my heart. I also have her treasured recipe box. The other day I made her rice pudding recipe. There is nothing like it I swear. I had quite a few folks messaging me asking for it so here goes:

Gramma June's Rice Pudding:

  • 1 1/2 cups cooked white rice

  • 2 cups milk, divided

  • 1/3 cup white sugar

  • 1/4 tsp salt

  • 1 egg, beaten

  • 2/3 cup raisins

  • 1 TB butter

  • 1/2 tsp vanilla extract

  • 1/4 tsp nutmeg

  • 1/4 tsp cinnamon

In a saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes.

Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter, vanilla, nutmeg, and cinnamon. Serve and enjoy!

It's not a difficult recipe....it's quite easy in fact. So good too! I usually have a bit for left overs. I've found that overnight it gets thick. Just add a little milk when reheating it and enjoy again.
